Achar - the easy way out

On Friday, I did my grocery shopping.. I had too many carrots so I wondered what I could do with the excess carrots. I got myself into tons of trouble when my 'smart' brain decided on Achar. XD 

I referred to the recipe by Miss Tam Chiak but made adjustments to suit my liking. Every household has their version of achar and I'm not saying that this is the authentic way to doing it. I just happen to like it. (:

The quantity of vegetables etc is really up to you though one shouldn't stray too far away from the suggested quantity lest the seasoning be insufficient. 

I took about an hour to prepare this Achar and I'd rate it a difficulty level 2 out of 5. 


Achar Recipe


300g cucumber
150g cabbage
150g carrot
1 pineapple
50g ground roasted peanuts
2 tbsp white sesame seeds
2 tbsp salt
1 tbsp sugar
3 tbsp oil
50ml rice vinegar

5 shallots
5 fresh red chilli
1 tsp turmeric powder
2 candle nuts
30ml water

1/2 cup water (add only if needed)

Method

Slice vegetables and pineapple into desired bite sized pieces. 

Add 1 tbsp salt to the mix and mix well.

Place mixture in a sieve and allow excess liquid to drain.

In a food processor/blender, add all the spices.

Blend it till a paste is achieved.

In a frying pan on low heat, add oil and spices. 

Increase heat to medium-high heat and fry paste till fragrant.


Once paste is fragrant, add water and rice vinegar. 

If mixture is too dry, add a little water (up to 1/2 cup)

Once mixture starts boiling, add sugar and salt (1 tbsp ONLY) to taste.

Remove from heat and add ground peanuts. 

Add vegetables and sesame seeds.

Mix well, allow mixture to cool completely before bottling it. 

I bottled mine and gave most of them away.. Allow flavours to develop for a day or two before savouring it.. Enjoy!
