Rainbow Thins (Cats' Tongue Cookies)


My hands were itchy since it was almost CNY and what better way to have fun than to bake? I decided to bake these Rainbow Thins as I love colours and these are just so pretty! These cookies are light and thin.. and crunchy too (if kept fresh in an air tight). To make it a little more festive, I added the zest of a mandarin orange... that's totally optional though! 


I took about 1.5 hours in all to bake all 5 trays of cookies. I'd rate it a difficulty level 3 out of 5. The piping can be pretty time consuming though! 

Cats' Tongue Cookies Recipe

250g unsalted butter, room temperature
175g castor sugar
150g plain flour
75ml egg whites (from 2 55g eggs)
1/4 tsp baking powder
zest from 1 mandarin orange
1 tbsp vanilla bean paste
6 gel food colouring 

Method

Ingredients I used (: 

Weigh and sift the baking powder and flour. 

Weigh the whites (I used 2 whites from 55g eggs)


Zest the mandarin orange (optional) 

Add sugar to the butter

Cream the butter and sugar till it's light and fluffy

Add in orange zest and vanilla bean paste

Mix well

Add in 1/2 the flour and mix well

Add in other half and mix well

This is the texture you'd be looking for

Portion batter into 6 bowls

Add in colour. Gel food colouring is preferred for the vibrant colours. I do not recommend liquid colours though you try it. 

Mix the colours well

Scoop into piping bags

Space the cookies and pipe the strips onto the baking paper (I'm using silicon baking sheets here)

Pretty colours!

Bake in preheated oven of 150 degree Celsius, fan mode for 13-15 minutes. Keep an eye over the cookies as they do brown easily once it's cooked. 

You may use hand drawn stencils for cookies of other shapes. I did heart shaped ones.

Remove cookies from oven and allow to cool in the baking pan for 3 - 5 minutes before transferring to a cooling rack to cool completely.

I also baked some rainbow shaped cookies, hearts, clouds and even the sun!

Allow cookies to cool completely before storing in an air-tight container.
