Simple English Muffins

I love English Muffins. I often buy them from Marks & Spencer and have them with patty. When I saw this recipe by Neo, I just had to bake them! (: Little did I know, they're just really really simple! So this recipe takes bout 20 minutes to prepare and proofing takes 2 hours... and cooking it takes 15 minutes. That's easy as it gets.. and it can be done without an oven!!!

I had mine with a Ramly burger chicken patty and an poached egg..

English Muffin Recipe

This recipe makes 6 English Muffins

300g bread flour
160ml milk
1 egg
5g salt
5g sugar
5g yeast
10g butter

Some corn meal (About 15g for dusting)

Add all ingredients except for butter into mixing bowl. I had my milk first.

Add the egg.

Cover with flour.

Add salt.

Add sugar.

Add the yeast (I kept this away from the salt)

Mix the dough.
  
Mix it for about 3-5 minutes till everything is well mixed. I did this on medium speed.

Add the butter. Let it mix well.

Oil or butter your hands and remove dough from mixer.

Place dough in a greased bowl.

Cover with cling wrap.

Place into a warm and dry place to proof for an hour or till dough has doubled in size. 

Remove from bowl. Punch a hole in the middle of the dough to release the air and divide dough into 6 equal portions. Remember to grease your hands! 

Divide into 6 portions and proof in warm and dry place for another hour. I was lazy so my dough were not of equal portions! 

Larger dough! (:

This is the corn flour I used to dust the muffins. It's not your usual sauce thickener type if corn flour.

The corn meal.

On low to medium heat, warm up the pan. Place dough that has been coated with corn meal into the pan. 

Pan fry for a couple of minutes till you get a brown surface like such. 

Flip over and cook the other side. 


Remove from heat and allow to cool completely on a cooling rack.
