Green Tea Pistachio Tofu Cheesecake


I have been away... and I'm thrilled to bring you this Green Tea Pistachio Tofu Cheesecake this weekend! It's something different from the usual yoghurt cheesecakes I've baked. This was adapted from one of my favourite bloggers Shiberty. It takes merely 1.5 hours in all to 'bake' this no-bake cheesecake! (:




Green Tea Pistachio Tofu Cheesecake Recipe

This recipe yields a 8" round cake

200g digestive biscuits
80g unsalted butter

250g cream cheese (room temperature)
200g icing sugar
50g water
15g gelatin
50g milk
300g silken tofu
200g plain yoghurt
1 tbsp vanilla bean paste

10g green tea powder
100g salted pistachio

    1. hello,

      tofu is an essential component of this cheesecake, not suited to be replaced. If you like this combo, you can adapt the toppings (matcha powder and pistachio) for another cheesecake.. maybe the one for strawberry jelly hearts will tickle your fancy.
