Inspired by little pretty cakes I found online, I decided to do these pretty Ombre Stacks. They're similar to the Rainbow Cakes II that I did, just that the assembly is different.
The recipe will take around 2 hours in all to complete and I'd rate it a difficulty level 3 out of 5.
Ombre Stacks Recipe
This recipe yields about 5 - 6 Ombre Stacks
160g plain flour
1 1/2 tsp baking powder
A pinch of salt
110g unsalted butter
150g castor sugar
1/2 cup milk
2 eggs (55 in size)
1 tsp vanilla bean paste
250g cream cheese
110g unsalted butter
165g icing sugar
1 tbsp vanilla bean paste
Wilton gel food colouring: violet and pink
Method
Preheat oven to 170 degree Celsius, fan mode. Sift the dry ingredients.
To the room temperature butter, add the castor sugar.
Mix well till creamy.
Add an egg and mix well.
Repeat with other egg.
Add the vanilla bean paste.
Add 1/3 of the milk. Mix well.
Add 1/3 of the flour and mix well. Repeat with milk and flour in 1/3 additions till it runs out.
You should get something like this.
Weigh the batter and divide it into 4 equal portions. Colour each accordingly.
I used Wilton Violet and pink in 3 levels of intensity.
Fill your cupcake cups till 2/3 full. Bake for 15 - 20 minutes till toothpick comes out clean when poked into the middle of the cupcake.
Baked! Allow them to cool completely.
To the room temperature cream cheese, add the room temperature butter. Mix well.
Add the vanilla bean paste and icing sugar.
Mix well!
Peel cupcake liner from cupcake.Trim off top portion of the cupcake. Slice cupcake into 3.
3 slices!
For the base, I trimmed a cupcake liner.
Place cake on it. You may secure it with a small dollop of cream cheese mixture. You may choose to either spread a layer of cream cheese mixture or to pipe it. I started with violet, followed by dark pink, medium pink and baby pink.
Top with next layer of cupcake.
Repeat steps.
