Puteri Ayu (Steamed mini pandan coconut cakes)

I happen to chance upon these moulds when I was in the supermarket yesterday and I recalled the Puteri Ayu recipe I saw on Nasi Lemak Lover! I decided to buy it cos it was merely a dozen for close to 2 bucks (: I modified a lil' of the recipe and enjoyed this warm snack! This took me about an hour to cook and prepare (including blending). 


Puteri Ayu Recipe
This recipe yields about 14-15 mini steamed cakes
Ingredients:

COCONUT LAYER
60g freshly grated coconut
1/6 tsp salt
1 tsp corn flour

CAKE LAYER
2 eggs
100g fine sugar
150g plain flour
1/2 tsp baking powder
120ml coconut milk
6 pandan leaves
1-2 drops of green food colouring




Steps:

Wash and snip the pandan leaves so that it's much easier for the blender to blend. Do not include the white ends nor the top 2" of the tips. 

Place the snipped pandan leaves into the blender. Add the coconut milk and blend well.

All well blended! (:

Sieve the mixture through a fine mesh sieve.

The grated coconut I got fro NTUC cos I failed to get it from the wet market.

Add the salt and the corn flour. Mix well. 

Scoop some into the mould.

Using another mould, compress the coconut layer tightly. (:

My KA Pot could fill 11 cups at a go so I had to do a round 2. 

Sieve the flour and baking powder.

Add the eggs to the sugar and whisk immediately till fluffy. (Machine whisk recommended)

Whisked!

Add the pandan coconut milk.

Add the flour mixture.

Add the food colouring (optional).

Just a small drop will do.

Mix well!

Scoop the batter into the moulds. Do fill a lil' lesser than what I did here.. These were a lil' too full.

Steam for 10 - 15 minutes on high heat or till' toothpick comes out clean when inserted into a cake.

Steamed! You'll get a flatter 'base' with lesser batter! Leave to cool for 5 minutes before unmoulding.

Enjoy these little delightful snacks!

  4. Hello, your recipe looks great, but since I am here in California, can you please translate your measurements to cups ? I think in cups is easier. Thank you very much

    1. Hello!

      I'd suggest that you get a weighing scale as it allows for more precision as compared to cups. I may not be able to give you a whole number with the conversion so we may end up with 7/8 cup which is really tough for you to measure (:

  5. Hi Cynthia!
    Can I check how long can we kept the cakes for?
    I was thinking to get the fresh coconut milk from the wet market and maybe try the receipe over the weekends and bring some for my collgs on monday but was afraid that it will be spoilt by then ):

      It's best eaten on the day itself. Else, I usually do it the night before and steam it for 5 mins or so till it's warm for the next morning.
